I haven't posted my meal plan for this week... with the new baby, I'm having trouble keeping up with the blog, but I'm hoping to be on a better schedule soon. I'm not sure if I'll get it posted this week, but for dinner we are having: Buffalo Quinoa Burgers with leftover "green feast", Avocado Bacon Grilled Cheese with Spinach Salad and Grapes, Farmer's Dinner (I'll post about it if it turns out well), Baked Potato bar with chili (from the freezer), and Taco cupcakes (that's as much as I have figured out for now.) The taco cupcakes and the Quinoa Burgers (combined with the Buffalo Quinoa Bites) are on my Pinterest board: http://pinterest.com/jdpottinger/recipes/ I'm also planning on trying the cantaloupe smoothies for breakfast.<br /><br />We love the avocado pizzas (in fact we had them again this morning.) Your meal plan helped to break up our normal routine and was so much fun.<br /><br />The bean avocado pizzas and leprechaun juice were the favorites. They also like the mousse as it is sweet and meant to be a desert.<br /><br />I tend to have lots of troube following a recipe exactly. I usually make tons of substitutions. We did enjoy the pesto pasta. If I remember correctly, I did substitute fresh garlic (you can never have too much fresh garlic for me). I also substituted spaghetti pasta for the shells, and sunflower seeds for the pine nuts. I have only seen pinenuts at one store here. I rememebered when I was making it that the last time I made it with fresh garlic (prior to that I had taken the easy route and used jarred) that 4 cloves of garlic was too strong... i have now rewritten the recipe to 2 cloves, but I'm thinking that you made it before I made that change. My older two kids ate and loved everything. My youngest loved the leprechaun juice, the green pepper soup and bean avocado pizzas. She is usually much more difficult to please. The leprechaun juice is almost half spinach.
