St. Patrick's Week - Green Foods

Last year we ate green food all week to celebrate St. Patrick's Day. I found the Teaching Good Eaters blog which is full of healthy recipes and eating ideas and the source of most of these recipes.

Spinach Pesto
Green Pepper Soup
Bean and Avocado Pizzas
Leprechaun Juice
Green Magma Juice
Key Lime Mousse

The Key Lime Mousse recipe came from the book Raw Food Made Easy by Jennifer Cornbleet. Like many of the recipes in the book it is so simple to make - just avocados, lime juice and honey mixed together in a food processor.- Delicious!

We finished up the week with a lightning fast St. Patrick's Day parade.

    1. We normally eat lots of pretty healty food, so this wasn't a big change. My older two kids ate and loved everything. My youngest loved the leprechaun juice, the green pepper soup and bean avocado pizzas. She is usually much more difficult to please. The leprechaun juice is almost half spinach. I thought that was pretty good.

  7. Yeah!! I love all of your green and the avocado mouse looks really interesting! Did your kids like it? How did everything else go? I hope that you liked the pesto... I rememebered when I was making it that the last time I made it with fresh garlic (prior to that I had taken the easy route and used jarred) that 4 cloves of garlic was too strong... i have now rewritten the recipe to 2 cloves, but I'm thinking that you made it before I made that change. By the way, I put the pesto on toasted sandwich thins and made a sandwich with an egg cooked with feta and it was amazing!

    1. It went great! I'm really hoping you post your meal plan every week. We eat similar foods, but yours taste so much better. Your meal plan helped to break up our normal routine and was so much fun.

      The bean avocado pizzas and leprechaun juice were the favorites. They also like the mousse as it is sweet and meant to be a desert.

      I tend to have lots of troube following a recipe exactly. I usually make tons of substitutions. We did enjoy the pesto pasta. If I remember correctly, I did substitute fresh garlic (you can never have too much fresh garlic for me). I also substituted spaghetti pasta for the shells, and sunflower seeds for the pine nuts. I have only seen pinenuts at one store here. It is 30 minutes away and the nuts are very expensive - $12 for 1/8 cup.

    2. So glad it went well! I haven't posted my meal plan for this week... with the new baby, I'm having trouble keeping up with the blog, but I'm hoping to be on a better schedule soon. I'm not sure if I'll get it posted this week, but for dinner we are having: Buffalo Quinoa Burgers with leftover "green feast", Avocado Bacon Grilled Cheese with Spinach Salad and Grapes, Farmer's Dinner (I'll post about it if it turns out well), Baked Potato bar with chili (from the freezer), and Taco cupcakes (that's as much as I have figured out for now.) The taco cupcakes and the Quinoa Burgers (combined with the Buffalo Quinoa Bites) are on my Pinterest board: http://pinterest.com/jdpottinger/recipes/ I'm also planning on trying the cantaloupe smoothies for breakfast.

      We love the avocado pizzas (in fact we had them again this morning.) They are such a great healthy comfort food.

      I rarely follow a recipe exactly and I have trouble posting my recipes because I don't usually measure things exactly when I'm making them so I have to make up measurements to post them!
